Watermelon S’mores: What could possibly be better than watermelon, fudge sauce and mini-marshmallows?
Ingredients:
- 1 cup graham cracker crumbs

1/2 cup chocolate fudge sauce
-
4 two-inch by four-inch by one-inch thick rectangles of seedless watermelon

1 cup mini marshmallows
Directions:
Sprinkle the graham cracker crumbs over the center of 4 plates. Drizzle 1/3 of the fudge sauce over the crumbs. Place a watermelon rectangle over the crumbs and chocolate on each plate. Drizzle 1/3 of the chocolate fudge sauce over the watermelon. Sprinkle the marshmallows over the watermelon and drizzle the remaining chocolate fudge sauce over the marshmallows. Serves 4.
Watermelon Breakfast A-Go-Go: A light, energizing way to start the day
Ingredients:
(For 50 parfaits)

15 pounds small chunks of seedless watermelon
-
3 quarts low fat banana yogurt
-
6 to 7 pounds of low-fat granola
Directions:
In a large, cylindrical glass or 16-ounce ‘to go’ cup or lidded container, create the following parfait:
Bottom Layer: 1/3 cup low fat granola
Next Layer: ½ cup small chunks of seedless watermelon
Next Layer: ½ cup low fat banana yogurt
Next Layer: 1/3 cup low fat granola
Next Layer: ½ cup small chunks of seedless watermelon
Top Layer: ½ cup low fat banana yogurt
Garnish: A slice of banana, toasted almonds or coconut, and chunks of watermelon

Watermelon Cucumber Shrimp Cocktail: A traditional favorite with a new twist.
Ingredients:

2 tablespoons extra virgin olive oil

1 bunch scallions, trimmed and chopped
-
1 teaspoon toasted sesame oil
-
2 tablespoons fresh lime juice
-
½ cup water
-
¼ cup sugar
-
1 teaspoon salt
-
1 clove garlic, minced
-
Cracked pepper or hot pepper sauce to taste

1 pound cooked, cleaned and chilled cocktail shrimp
-
1 cucumber, peeled, seeded and chopped
-
¼ cup chopped cilantro leaves
-
4 three-inch watermelon circles
-
Thin breadsticks, sugar cane swizzles or celery sticks for garnish
Directions:
Heat the oil in a sauté pan over medium high heat. Add the scallions and sauté. Remove from heat and stir in sesame oil. Set aside. Whisk together the lime juice, water, sugar, salt and garlic. Spice to taste with pepper or pepper sauce. Stir in the shrimp, cucumber and cilantro. Mix well then chill. Divide the watermelon among 4 small dishes. Divide the shrimp and cucumber mixture over the watermelon and drizzle the scallion mixture over the top of each cocktail. Serves 4.
