I love cooking healthy meals for my family. I am very conscious about what we put into our bodies, but I have to admit... Cooking 3 + meals per day can be exhausting!! I feel like my boys are constantly eating!! If I want them to eat healthy, and literally not spend the entire day in the kitchen.... I need to have healthy foods prepped and ready to go!! I am going to share with you some of my favorite versatile recipes that help me drastically reduce my time in the kitchen!
Today's recipe is a cruciferous salad!! My boys love this salad!! The best part is that it is super healthy!!
I start with 2 heads of broccoli...
Wash and chop the heads and stem
Next, we need two small heads of Cauliflower
Wash, scrape off any brown spots, throw out the leaves and chop the head.
I add one red onion, 5 carrots, 1/3 cup chopped green olives, 1/4-1/2 cup sunflower seeds, and 1/4- 1/2 cup goji berries.
Peel and dice the onion...
Peel and grate the carrots.
Chop the olives..
Top with Organic Lemon Juice, Apple Cider Vinegar, Avocado Oil and Sea Salt. to taste. Stir to combine and let marinate in the fridge for at least 2 hours.
Your salad is ready to eat and the base of many meals! Below, I added half of an avocado and topped with grated ginger and some cayenne pepper for lunch. Tomorrow I may make a pan of bacon, crumble and add on top. Some days we add black beans or grilled chicken. We have mixed with cooked quinoa and sausage as well!! This salad will not wilt and lasts in the fridge for 4-6 days!! It is perfect to take to work for lunch as well! I hope you enjoy!
Cruciferous Salad
Prep- 15-20 minutes Servings- 12
Salad
2 heads of Broccoli (chopped)
2 heads of Cauliflower (chopped)
1 Red Onion (diced)
5 Carrots (peeled and grated)
1/3 Cup Green Olives (chopped)
1/4 - 1/2 Cup Sunflower Seeds
1/4 - 1/2 Cup Goji Berries (you could sub with Raisins)
Combine all ingredients in a large bowl and top with dressing.
Let marinate in the fridge for at least 2 hours for the best flavor.
Dressing
1/4 Cup Organic Lemon Juice
1/4 Cup Apple Cider Vinegar
1/8 Cup Avocado Oil
Himalayan Pink Salt
I have to be honest in that I no longer measure when making my dressing!! So
this is a starting point for you! I mix the above ingredients in a small bowl and
adjust to taste. Sometimes, I just dump each ingredient onto the veggies!! These
dressing ingredients are delicious together and very hard to mess up so have fun
with it!
