Join the healthy cooking program at 6:00 PM on November 19 for
a free virtual healthy cooking class, and learn to make a great Chili from the
comfort of your own kitchen.
Meet new staff member,
Chrisso Babcock of Woodstock, NY, who joins Cornell Cooperative Extension
of Ulster County to facilitate the new Healthy Cooking Program in partnership
with Ellenville Regional Hospital.
Chili is cheap and healthy, and a comforting meal
on a cold fall or winter night. This is a great recipe for a family dinner, or
to make and set aside for easy meals throughout the week. If you want to cook
along with the class at home, you will need:
- 1/2
pound lean ground meat
- 1
medium onion
- 1
can (15 ounces) kidney beans
- 2
cans (14.5 ounces each) diced tomatoes
- Chili
powder
- 1
carrot (optional)
- 1
bell pepper (optional)

The class is
part of a series of healthy cooking classes offered as a collaboration between
Cornell Cooperative Extension of Ulster County and Ellenville Regional
Hospital. The goal of the program is to improve the health of Ulster County
residents by teaching easy, cheap, and healthy home cooking. This winter, there
will be a focus on comforting, nourishing one-pot meals and other dishes that
are easy on the prep and clean-up. At present, all classes are virtual and easy
to attend from home and if you want to, you can even cook along! The classes
are free and open to any Ulster County residents.
The class will
be taught by Chrisso Babcock of Cornell Cooperative Extension of Ulster County.
Chrisso is a food lover and kitchen educator. He started his journey in food as
a farmer, and quickly grew to love cooking large meals for the crew. He has
been teaching cooking workshops for many years. “I am very excited to be
offering this virtual cooking series. If you are looking get some new recipes
into your rotation, save money, save time, and eat healthier, these classes will
be great for you and your family.”
